This celebratory class will focus on foods grown and eaten by African Americans as part of Juneteenth celebrations. In particular, this class will focus on mustards, collards, and sweet potatoes: why and how we grow them and the role they play in African American cuisine.


Billy Lawton is the Retired Program Leader for AgNR Cooperative Extension Program at Prairie View A&M University. He is currently serving as Board President for the Texas Coalition of Rural Landowners. Mr. Lawton served as a member of the Socially Disadvantaged Farmer and Ranchers Policy Research Center Board, which drafted Farm Bill Policy affecting this audience. He is presently serving on the Southern Rural Development Center “Heirs Property Taskforce”. Mr. Lawton has served as Project Director for several grants to conduct estate planning and property resolution training in East Texas. He has been involved in designing and delivering outreach education to farmers and ranchers’ on heirs’ property issues for over 12 years.

LaJoyce, a 5th generation Culinary Arts Zealot has a vast and varied career working as a Nutrition, Cultural, and Culinary Educator in both Secondary and University settings. She has developed and taught classes such as “Cuisine & Culture: Japan, France, & Spain” and “Foodways of the African Diaspora.”

Additional community Culinary Arts work includes serving as keynotes for the Oklahoma Association of Extension Home Economist annual conference, the Minority Landowners Magazine conference, and the Landowners Association of Texas conference. She was an ambassador for the first Houston Black Restaurant Week, volunteers with Houston Livestock Show & Rodeo committees and was a Business Planning Consultant for the Trade Adjustment Assistance for Farmers and Fishermen federal program.

Registration will close 24 hours before classes Monday-Saturday and 48 hours before Sunday classes.
